Pinot Noir Cabernet
Winemaking Notes
This wine is a blend of 80% 2006 Pinot Noir and 20% 2005 Cabernet Sauvignon. Both varieties were fermented in open fermenters and plunged 5 times daily during fermentation. Fermentation was completed by inoculated yeast (RC212 and BDX respectively) to retain strong primary fruit characters. Following fermentation the wine was pressed and racked to 3 - 5 year French Oak old barrels for maturation for a period of 10 months.
Tasting Notes
This unusual blend on Pinot Noir and Cabernet shows the classic cherry and plum characters of Pinot Noir intermingled with the leafy cassis characters of Cabernet Sauvignon. The mid palate is full and rich whilst the wine finishes with some firm savoury tannins as a result of the Cabernet addition.
