2007 Pinot Noir
Winemaking Notes
2007 was a warm dry, low yielding year. As a result the fruit was in perfect condition when picked with fantastic flavour depth and rip tannins. All of the fruit was fermented in small open fermenters and hand plunged 4 - 5 times daily. There were seven ferments in total, and each ferment was treated differently. In total 60% was wild fermented, 20 % was whole bunch fermented and 5 % was drained off at 6 Baume for barrel fermentation. The wine was matured in French oak for 11 months with 20% being new oak.
Tasting Notes
This Pinot has fresh vibrant aromas of cherry and plums on the nose with an underlying earthy, spicy aroma which will continue to evolve with age. The palate is rich, silky and supple with fantastic fruit weight and depth.
