2005 Riesling
Winemaking Notes
The 2005 Riesling was picked later than usual due to a freak storm that hit the vineyard in February 2005. This resulted in a massive loss of leaves and consequently the vines struggled to ripen the remaining fruit. However, the wine that has resulted is absolutely supurb. The juice was filtered prior to fermentation and was cold fermented with QA23 yeast. Some residual sugar was retained to balance out the naturally high acidity. Following fermentation the wine was stabilised and filtered prior to bottling.

The 2005 Holm Oak Riesling shows aromas of lime leaf, honey and marmalade on the nose. The palate is rich and weighty, with a backbone of steely acidity. This wine has stunning depth and complexity and will continue to cellar gracefully until 2015.
